Melinda’s Raw Gingerbread People (slideshow follows)

Buy organic ingredients:
1 c Flax Seeds soaked for 8 hours in 1 cup water
1 heaping T grated fresh Ginger Root
2 dates pitted soaked in ¼ c water (If you are on the phase1 low-glycemic diet - substitute 1/4t dried stevia leaves for the dates and agave)
1 T Raw Agave
1 heaping T Cinnamon
1 T Fennel seeds1 T Organic Maca
1 T Chia seeds soaked in 1T water to thicken
1 T Hemp
Grate the ginger or use a small food processor. In a large food processor, combine ginger, cinnamon, fennel seeds, Maca, Chia , dates and agave, then add flax and cereal. Mix until the ingredients pull away from the blade and ball up. You may need to add water to get the right consistency. Remove the dough and knead with your hands to make sure the spices are mixed thoroughly. Break off small balls of dough and form people or houses or whatever and decorate with natural ingredients such as seeds or berries or cocoanut. Be creative and enjoy. Dehydrate for an hour at 115 degrees or longer if you want them dryer. They taste great raw too!
The cookies can be decorated before placing in the dehydrator or after. In the pictures of my cookies I decorated the snowman and tree before dehydrating and the gingerbread man and woman afterwards. I used organic cocoa nibs for the buttons and shoes, a carrot for the nose, tomatoe for the mouths, Kale for the leaves and broom, black sesame seeds for the shirt, fennel seeds for the stars, pumpkin seeds for the eyes, broccoli sprouts for the boy’s hair and brazil nuts for the gingerbread girl's pony tails.
Raw organic coconut oil/butter makes a good white icing. Add banana for a yummy banana coconut icing or grind up brazil nuts, and mix with bananas, cocoa nibs and Raw organic coconut oil/butter for a really yummy icing treat.
